BAKED BURRITO CASSEROLE

Ingredients:

1 lb ground beef, lean

1 small onion, chopped

10 ounces canned black beans, drained

2/3 c corn

¾ c salsa

1 teaspoon dried oregano

1 teaspoon cumin powder

1 teaspoon garlic powder

salt & pepper, to taste

8 flour tortillas, 8-inch size

2 1/2 c shredded cheese, a mixture of cheddar and jack

Serving – optional

green onions, chopped

guacamole

sour cream

Directions:

Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Step 2: Apply cooking spray in a 13×9-inch baking dish.

Step 3: Put a large non-stick skillet on the stove and turn the heat to medium-high.

Step 4: Add the ground beef and cook for 5 minutes or until brown. Discard any excess grease.

Step 5: Add the onion and sauté until translucent.

Step 6: Add the salsa, black beans, corn, cumin, oregano, garlic powder, salt, and pepper. Stir and cook for about 3 minutes or until done.

Step 7: Fill each tortilla with the meat mixture and roll it to make a burrito. Repeat the process to the rest of the ingredients.

Step 8: Arrange the burritos onto the prepared pan.

Step 9: Sprinkle a generous amount of shredded cheese on top.

Step 10: Place the pan inside the preheated oven and bake for 20 minutes or until done.

Step 11: Remove from the oven and garnish with green onions on top.

Step 12: Serve and enjoy!
