3 cups sifted cake flour
1 tablespoon baking powder
1 1/2 teaspoon baking soda
3/4 teaspoon salt
3/4 cup shortening
2 1/4 cups granulated sugar
3 Eggs, well beaten
1 1/2 cups mashed ripe bananas (about 4 bananas)
1 1/8 cups buttermilk
1 1/2 teaspoon vanilla extract
3/4 cup hot milk
1/2 cup butter
1/2 cup shortening (butter flavoured Crisco not recommended)
1 teaspoon vanilla extract
1 tablespoon cornstarch
1 cup granulated sugar
To Make the Banana Cake:
Step 1: In a small mixing bowl, sift together flour, baking soda, baking powder, and salt.
Step 2: In another mixing bowl, add the shortening and stir until creamy.
Step 3: Moderately add sugar and stir until well blended.
Step 4: Add in the bananas and beaten eggs. Stir until well combined.
Step 5: Add the flour mixture and vanilla alternately into the buttermilk. Stir until well combined.
Step 6: Apply cooking spray and spray flour in two 9-inch layer pans.
Step 7: Transfer the mixture into the prepared pans.
Step 8: Place the pans inside the oven and bake at 375 degrees F for 25 to 30 minutes or until done.
Step 9: Remove from the oven and allow it to cool at room temperature.
To Make the Buttercream Frosting:
Step 1: Place a saucepan on the stove and add in the milk. Turn the heat to medium and heat the milk. Make sure not to boil.
Step 2: In a small mixing bowl, add the butter and shortening. Stir until well mixed and fluffy.
Step 3: Add in sugar and cornstarch gradually, and then stir every addition.
Step 4: Add in the vanilla and stir until well blended.
Step 5: Pour the hot milk gradually into the sugar mixture while stirring continuously until thick.
Step 6: Spread the frosting over the cooled cake.
