Taco Bell Quesadilla Sauce:

Step 1: In a small bowl, combine the sauce ingredients (pickled jalapeno juice, mayo, cumin, sugar, paprika, garlic powder, cayenne powder, pickled jalapeno, and salt) until well mixed. Set aside.

Taco Bell Quesadilla:

Step 2: Sprinkle both sides f the chicken breast with salt and pepper.

Step 3: In a skillet, heat 1 1/2 tbsp vegetable oil over medium-high heat. Once the oil is hot, add the chicken breast to the skillet and cook until the internal temperature of the chicken reached 165 degrees F. Take the chicken from the skillet when done and slice thinly.

Step 4: On the hot skillet, lay the tortilla. Place 1/4 cup of the shredded cheese and a half slice of American cheese on one side of the tortilla. On top of the cheese, place half of the chicken.

Step 5: Spread around 1.5 tbsp of the sauce on the other side of the tortilla. Now, fold the tortilla and gently press using a spatula. Cook for about 2 to 4 minutes per side until the cheese has melted and bubbly.

Step 6: Slice the quesadilla into 4 pieces using a pizza cutter. Enjoy!
