CROCKPOT PORK CARNITAS

Ingredients

3-4 lbs pork loin

1 orange

1 lime

1 onion

6 cloves garlic minced

2 bay leaves

1 tablespoon each chilli powder, paprika, and cumin

kosher salt, pepper, crushed red pepper flakes

1/2 can beer

How to make Crockpot Pork Carnitas

Step 1: Into 6 to 8 large pieces, divide the pork loin, then place them in a crockpot.

Step 2: Into 6 wedges, slice the orange and lime, then squeeze the juice over the pork. And over the pork, add the wedge.

Step 3: Peel and slice the onion into large pieces. Add this over the pork followed by the garlic, bay leaves, chilli powder, paprika, cumin, kosher salt, pepper, and crushed red pepper flakes.

Step 4: Into the crockpot, hour half a can of beer, then set the pot on low and cook for 6 to 8 hours.

Step 5: With parchment paper or foil, line a baking sheet. Carefully add the slices of pork to the baking sheet using tongs or two forks. Shred, then evenly spread shredded pork on the baking sheet.

Step 6: Spoon half of the liquid from the pot over to the pork. Broil in the middle rack position in the oven for about 5 to 7 minutes on high.

Step 7: Take the baking sheet from the oven, toss the pork, then spoon the remaining cooking liquid over. Bake for another 5 to 7 minutes. Adjust the seasoning according to taste. If needed, add more chilli powder, paprika, cumin, kosher salt, pepper, and/or crushed red pepper flakes.

Step 8: Enjoy by itself or serve as a filling for tacos, burritos, or nachos.
