3 baked, grilled or rotisserie chicken breasts, cubed.
1 medium diced green apple.
2-3 green chopped onion stalks.
¼ cup of chopped pecans.
½ cup of mayonnaise.
1 ½ tbsps of honey.
1 ½ tbsps of lemon juice.
1 tbsp of Dijon mustard.
1 tsp of poppy seeds.
½ tsp of onion powder.
A pinch of salt.
In a medium mixing bowl, mix together the mayonnaise, honey, lemon juice, dijon mustard, poppy seeds, onion powder and salt until well combined.
Mix in the diced chicken, green apples, pecans and green onions until well combined and Voila!
Simple, easy and delicious! I serve this waldorf chicken salad on rolls or a bed of lettuce. When I make this, I pass the main dish and eat just the salad! Give it a shot, you’ll love it!
