  • Filling
  • 1 package 8 ounces cream cheese, room temperature
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup butter 113g, melted
  • 4 cups confectioners sugar

Instructions

  • Turn oven on to 350°F (I set my convection oven at 325°F.
  • Combine the cake mix, 2 eggs and 1 teaspoon vanilla in a bowl. Add the melted butter to the bowl. Mix all ingredients together using a fork.
  • Use a 9-inch x 3-inch round cake pan, or a 9 x 13-inch baking pan coated with baking spray.
  • Place the cake mixture in a pan and flatten it.
  • Mix cream cheese, vanilla, remaining eggs, and butter in a stand mixer until smooth.
  • Mix in 1 cup of confectioners sugar at a time, and continue to mix on low speed until all sugar is added.
  • Spread cream cheese mixture on top of cake mixture
  • Bake for 35 to 45 minutes. The edges of mine were golden brown. However, the center was still slightly jiggly. Don't overcook.
  • Let cool completely before serving.
