  • 1/2 teaspoon olive oil
  • Ground beef 1 lb
  • 1 onion chopped
  • 1 stalk celery chopped
  • 1 tablespoon taco seasoning
  • 3 cups chicken broth or more depending on the pasta you use. Some types require more liquid but you can only add more as your pasta cooks.
  • 1 cup salsa
  • 1 12-oz. box small pasta shapes regular, whole wheat or high fiber. However, higher fiber pastas may require more liquid.
  • 1 red pepper chopped
  • 1/2 cup sweetcorn
  • Salt & pepper to your liking
  • 1/2 cup Mexican blend cheese or more according to your taste

Instructions
 

  • Saute vegetables: Heat oil over medium heat in a large skillet or large saucepan. Cook onion and celery until tender but not browned for about 3-4 minutes.
  • Brown beef: Turn the heat up to medium-high, and then add the ground beef. As the meat cooks, break up any pieces to make it crumbly. Mix in the taco seasoning and then add the chciken broth. Scrape any brown bits from the bottom of your skillet.
  • Add the remaining ingredients: Stir well. Bring to boil.
  • Bring to a boil Cover with a lid, reduce heat and simmer until the sauce thickens and pasta is cooked (about 10-15 minutes depending on how long you prefer). To prevent pasta sticking to the bottom, cover and stir every 2-3 minutes. If your pasta is looking dry, depending on its thickness, you might need to add 1/2 cup more broth to it during cooking. Cook covered for the last 2-3 minutes.
  • Take the skillet off the heat once you have finished cooking your pasta. Season the pasta with salt and pepper. Mix in the cheese. Let the pasta rest for about 1-2 minutes until it is melted. Serve immediately
