2 tablespoons oyster sauce

1 tablespoon honey

2 tablespoons chilli oil with chilli flakes Lao Gan Ma (If you have regular chilli oil, add 1 1/2 tablespoons chilli flakes)

1/4 teaspoon black pepper

3 tablespoons unsalted butter

10 cloves garlic, chopped

2 pounds peeled and deveined 31/40 shrimp

1 tablespoon Shaoxing wine, rice wine, or white wine (if you don’t want to consume alcohol in your cooking, use water)

3 green onion, chopped

1 red or green chilli, sliced (optional)

handful cilantro, roughly chopped

fried shallot or french onion for garnish

lemon or lime wedge


In a mixing bowl, add honey, oyster sauce, chilli flakes, black pepper, and chilli oil. Stir until well combined.

Place a large skillet on the stove and turn the heat to high.

Add butter and allow it to melt.

Add the garlic and saute until aromatic.

Add the shrimp and cook until done.

Pour the sauce over and scrape the bottom of the skillet to get the brown bits. Stir everything until well blended.

Remove the skillet from the heat.

Garnish with chilli, cilantro, fried shallot, and chopped green onions.

Serve immediately with lemon wedges and enjoy!
