For the Citrus Mojito Glaze
- Powdered sugar (180 g | 0.40 lb)
- Zest of 2 limes
- 2 tablespoons dark rum (30 ml)
- 2 teaspoons fresh lime juice (10 ml)
- Finely grated zest of ½ pink grapefruit
- ¼ teaspoon mint extract
- 1 teaspoon vanilla extract (5 ml)
Directions
- Preheat the oven to 350°F (175°C) and line one or two baking trays with parchment paper.
- In a large bowl, beat the softened butter and granulated sugar until the mixture becomes pale and fluffy.
- Mix in the egg, vanilla extract, and mint extract until smooth.
- In another bowl, whisk together the flour, baking powder, chopped mint, and lime zest.
- Gradually fold the dry ingredients into the butter mixture until a soft dough forms. Avoid overmixing.
- Scoop portions of dough, about one tablespoon each, and arrange them on the prepared baking trays, leaving about 2 inches (5 cm) between each cookie.
- Bake for 10–12 minutes, or until the edges are lightly golden while the centers remain soft.
- Let the cookies cool on the baking tray for several minutes before transferring them to a wire rack to cool completely.
- To prepare the glaze, whisk together the powdered sugar, lime zest, grapefruit zest, dark rum, lime juice, mint extract, and vanilla until smooth. If needed, add a few drops of lime juice to reach a pourable consistency.
