Ingredients
Makes about 16 cookie bars
For the Cookie Bars
- Unsalted butter, softened (170 g | 0.38 lb)
- Granulated sugar (150 g | 0.33 lb)
- Marzipan, finely grated or crumbled (225 g | 0.50 lb)
- 2 large eggs, room temperature
- Vanilla extract (1 teaspoon / 5 ml)
- Almond extract (½ teaspoon / 2.5 ml)
- All-purpose flour (260 g | 0.57 lb)
- Baking powder (1 teaspoon / 4 g | 0.009 lb)
- Fine salt (¼ teaspoon / 2 g | 0.004 lb)
Optional Topping
- Sliced almonds (40 g | 0.09 lb)
- Powdered sugar for dusting (20 g | 0.04 lb)
Directions
- Preheat your oven to 350°F (175°C). Lightly grease and line an 8 x 8-inch (20 x 20 cm) baking pan with parchment paper.
- In a large mixing bowl, beat the softened butter and sugar until the mixture becomes light and fluffy.
- Mix in the marzipan until well combined. Add the eggs one at a time, mixing thoroughly after each addition. Stir in the vanilla and almond extracts.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring just until no streaks of flour remain. Avoid overmixing.
- Spread the batter evenly into the prepared baking pan using an offset spatula.
- Sprinkle sliced almonds evenly over the top if using.
- Bake for 28–35 minutes, or until the top is lightly golden and a toothpick inserted into the center comes out with a few moist crumbs.
- Allow the bars to cool completely in the pan before lifting them out and slicing into squares or rectangles.
- Dust with powdered sugar before serving if desired.
Notes
- Allow the butter, eggs, and marzipan to come to room temperature for a smoother batter.
- High-quality marzipan provides the richest almond flavor.
- Do not overbake—the bars should remain soft and moist in the center.
- Add mini chocolate chips, chopped pistachios, or dried cherries for delicious variations.
- Store the bars in an airtight container at room temperature for 4 days or refrigerate for up to 1 week.
- Freeze individual bars for up to 3 months. Thaw at room temperature before serving.
- These bars pair wonderfully with coffee, tea, or a scoop of vanilla ice cream.
