Ingredients
  

Tempura Battered Chicken

  • 2 eggs whites
  • 1 cup all-purpose flour sifted
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1 cup of water ice-cold
  • 2 tablespoons of canola oil
  • 1 lb chicken thighs boneless-skinless cut into 1 inch pieces

Sauce:

  • Canola oil for frying
  • 1 tablespoon olive oil
  • Three cloves of garlic minced
  • Three green onions sliced thinly from tip to tail.
  • 1/2 cup Thai sweet chili sauce
  • 1/2 teaspoon crushed red pepper

Optional Garnishes

  • white sesame seeds
  • Minced green onions

Instructions
 

  • Combine all the ingredients for the batter in a large bowl.
  • A frying pan with enough oil should be heated up to deep fry the chicken pieces.
  • Use a slotted spoon to drain the batter and then place the chicken in the pan.
  • After the crust forms, break apart the chicken and cook the chicken until it is golden brown ( 4 to 5 minutes).
  • To prevent oil temperature from dropping too much, work in batches.
  • Take out the last chicken batch from the pan.
  • Place the green onions and garlic in a pan.
  • Mix the sweet chili sauce with crushed red pepper and add the chicken back.
  • Mix all ingredients together and serve immediately.
