Ingredients (Makes about 2 cups / 8 servings)

  • 1 large bunch fresh cilantro, finely chopped (about 80 g / 0.18 lb)
  • 1 medium bunch fresh flat-leaf parsley, finely chopped (about 60 g / 0.13 lb)
  • 6 garlic cloves, minced (about 30 g / 0.07 lb)
  • 2 teaspoons ground cumin (about 5 g / 0.01 lb)
  • 2 teaspoons sweet paprika (about 5 g / 0.01 lb)
  • 1 teaspoon ground coriander (about 2 g / 0.004 lb)
  • ½ teaspoon cayenne pepper or chili flakes, optional (about 1 g / 0.002 lb)
  • 1 teaspoon sea salt, or to taste (about 6 g / 0.01 lb)
  • ½ teaspoon freshly ground black pepper (about 1 g / 0.002 lb)
  • Zest of 1 lemon
  • ¼ cup freshly squeezed lemon juice (60 ml)
  • ½ cup extra virgin olive oil (120 ml)
  • 1 tablespoon water, if needed, to thin the sauce

Directions

  1. Wash the cilantro and parsley thoroughly, then pat them completely dry. Finely chop the herbs by hand or pulse them a few times in a food processor until finely minced.
  2. Transfer the herbs to a mixing bowl and stir in the minced garlic, cumin, paprika, coriander, cayenne (if using), salt, pepper, and lemon zest.
  3. Pour in the fresh lemon juice and olive oil, then mix until all the ingredients are evenly combined.
  4. If you’d like a smoother consistency, blend everything in a food processor for 20–30 seconds. Add a tablespoon of water if the sauce seems too thick.
  5. Taste and adjust the seasoning with additional salt, lemon juice, or olive oil as desired.
  6. Let the sauce rest for at least 20 minutes before serving to allow the flavors to develop.
  7. Use immediately or store in an airtight container in the refrigerator until ready to use.

Notes

  • Fresh herbs provide the best flavor, so avoid dried parsley or cilantro for authentic results.
  • For a smokier taste, substitute smoked paprika for sweet paprika.
  • If you enjoy extra heat, increase the cayenne or add a finely chopped fresh chili.
  • Chermoula is excellent as both a marinade and a finishing sauce for grilled fish, shrimp, chicken, lamb, vegetables, or even tofu.
