Bring the bold flavors of southern Turkey to your kitchen with this Authentic Tantuni recipe. Originating from the city of Mersin, Tantuni is a beloved street food made with thinly sliced beef, warm spices, fresh vegetables, and soft flatbread or lavash. The meat is cooked until tender and juicy, then wrapped with crisp tomatoes, onions, parsley, and a squeeze of lemon for a meal that’s simple, vibrant, and incredibly satisfying.
A Family Favorite That Never Lasts Long
Whenever I make Authentic Tantuni, everyone seems to appear in the kitchen before dinner is even ready. My husband loves the juicy, perfectly seasoned beef wrapped in warm flatbread, while the kids enjoy building their own wraps with fresh tomatoes and parsley. It’s one of those recipes that turns an ordinary evening into something special. We usually make extra because everyone comes back for seconds, and leftovers disappear by lunchtime the next day.

Ingredients
6 wraps
- 1½ lb (680 g / 1.50 lb) beef sirloin or flank steak, sliced into very thin strips
- 2 tablespoons (30 ml) vegetable oil
- 2 tablespoons (28 g / 0.06 lb) unsalted butter
- 1 teaspoon ground paprika
- 1 teaspoon ground cumin
- ½ teaspoon chili flakes (adjust to taste)
- ½ teaspoon ground black pepper
- 1 teaspoon salt
- ¼ cup (60 ml) water
For the Filling
- 2 medium tomatoes, finely diced (300 g / 0.66 lb)
- 1 large onion, thinly sliced (180 g / 0.40 lb)
- 1 cup chopped fresh parsley (30 g / 0.07 lb)
- 1 teaspoon sumac (optional)
- Juice of 1 lemon
- 6 lavash breads or large flour tortillas
Directions
- Slice the beef as thinly as possible. Chilling it in the freezer for about 20 minutes beforehand makes slicing much easier.
- Heat the vegetable oil and butter in a large skillet or griddle over medium-high heat.
- Add the beef in a single layer and cook for 4–5 minutes, stirring frequently until it begins to brown.
- Sprinkle in the paprika, cumin, chili flakes, black pepper, and salt. Toss well so every piece is coated with the spices.
- Pour in the water and continue cooking for another 3–5 minutes until the liquid evaporates and the meat becomes tender and juicy.
- In a separate bowl, combine the diced tomatoes, sliced onion, parsley, sumac, and lemon juice. Toss gently to mix.
- Warm the lavash or flatbreads for about 30 seconds per side in a dry skillet until soft and flexible.
- Divide the cooked beef evenly among the breads, then top with the fresh tomato mixture.
- Roll each wrap tightly, folding in the sides as you go.
- Serve immediately with extra lemon wedges, pickled peppers, or a fresh salad.
Notes
- For the most authentic texture, slice the beef paper-thin against the grain.
- Lamb can be substituted for beef for a richer flavor.
- Add sliced pickled peppers or extra chili flakes if you enjoy more heat.
- Warming the bread before assembling helps prevent tearing.
- Leftover beef can be refrigerated in an airtight container for up to 3 days.
- Reheat the meat in a hot skillet for the best texture before serving.
- Serve alongside Turkish-style yogurt, grilled vegetables, or crispy fries for a complete meal.
- This dish is an excellent source of protein and is naturally packed with fresh herbs and vegetables, creating a balanced and flavorful meal.
