Ingredients :

  • 2 medium zucchinis (about 400 g / 0.88 lb), sliced into rounds
  • 50 g (0.11 lb) grated Parmesan cheese
  • 60 g (0.13 lb) breadcrumbs
  • 2 tablespoons olive oil (30 ml / 27 g / 0.06 lb)
  • 2 cloves garlic, minced
  • 1 teaspoon (5 g / 0.01 lb) dried oregano
  • ½ teaspoon (2 g / 0.004 lb) salt
  • ¼ teaspoon (1 g / 0.002 lb) black pepper

Directions:

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Prepare the zucchini by washing and slicing into even rounds.
  3. Mix the coating in a bowl: Parmesan cheese, breadcrumbs, garlic, oregano, salt, and pepper.
  4. Brush zucchini slices lightly with olive oil on both sides.
  5. Coat each slice in the Parmesan mixture, pressing gently so it sticks well.
  6. Arrange on the baking sheet in a single layer.
  7. Bake for 18–22 minutes, or until golden, crispy, and slightly browned on the edges.
  8. Serve warm as a side dish or healthy snack.
