Packed with incredible flavours, these crispy on the outside and juicy and tender on the inside Baked Pork tenderloin is a must for any occasion. A pretty versatile recipe that you can make in under forty minutes!

1 or 2 1/2 lbs pork tenderloins

1 tbsp oil

2-3 tbsp fresh lemon, lime, or orange juice (or 1 tbsp of each)

2 tsp Italian seasoning

1 tsp garlic powder

1 tsp cumin

1 tsp salt

1 tsp chilli powder

1/2 tsp smoked paprika (optional but highly recommended)

1/4 tsp black pepper

Step 1: Prepare the oven. Preheat it to 400 degrees.

Step 2: Grease lightly a large baking or casserole dish.

Step 3: Use a fork to pierce the entire tenderloins, then coat with oil.

Step 4: In a bowl, place the Italian seasoning, garlic powder, cumin, salt, chilli powder, smoked paprika (if using), and black pepper. Whisk until combined.

Step 5: Sprinkle both sides of the tenderloins with the mixture, rubbing until evenly coated.

Step 6: Transfer the tenderloins into the prepared baking dish. Drizzle the top with lemon/lime juice.

Step 7: Place inside the preheated oven. Bake for about 25 to 35 minutes, or until the outside of the tenderloins is browned and crispy, and the middle is cooked through. Feel free to remove the tenderloins from the oven earlier if you want the middle still a bit pink.

Step 8: Covet the tenderloins with the juices. Let them rest in the baking dish or on a cutting board for at least 5 minutes before slicing into inch pieces.

Step 9: Before serving, spoon the juices on the slices and garnish with fresh chopped cilantro. Enjoy!

For this recipe, you can use 1 to 2 pretty small pork tenderloins or medium-large pork tenderloin. Also, feel free to double or triple the seasoning ingredients if serving a crowd.
