For the Pizza

- 1 tbsp (15 ml) extra-virgin olive oil
- 1 cup (250 g / 0.55 lb) whole-milk ricotta cheese
- 5 oz (140 g / 0.31 lb) fresh blackberries
- 3/4 cup (85 g / 3 oz) shredded mozzarella
- 1/4 cup (25 g / 0.9 oz) finely grated Parmesan
- 1 tsp (2 g) fresh lemon zest
- 1/4 tsp (1 g) freshly ground black pepper
- 1/4 tsp (1 g) sea salt
- 1/2 tsp (1 g) fresh thyme leaves, optional
For Finishing
- 1 1/2 tbsp (32 g / 1.1 oz) honey
- 2 tbsp (5 g / 0.2 oz) fresh basil leaves, torn
- 1 tbsp (15 ml) extra-virgin olive oil
- Flaky sea salt, to taste
- Additional lemon zest, optional
Directions
- Heat the oven: Place a pizza stone, baking steel, or heavy baking sheet in the oven and preheat to 475°F (245°C). Let it heat thoroughly for at least 30 minutes.
- Prepare the dough: Bring the pizza dough to room temperature for about 20–30 minutes. Lightly flour your work surface and stretch the dough into a roughly 12-inch (30 cm) round.
- Prepare the ricotta: Place the ricotta in a small bowl and stir until smooth. Mix in the lemon zest, a pinch of salt, and black pepper. This gives the creamy base a subtle citrusy brightness.
- Build the pizza: Carefully transfer the dough to a sheet of parchment paper or a lightly floured pizza peel. Brush the surface lightly with olive oil, leaving a small border around the edges.
- Add the ricotta: Spoon small dollops of the seasoned ricotta across the dough and gently spread them into an even layer.
- Add the cheese and berries: Scatter the mozzarella and Parmesan over the ricotta. Arrange the blackberries evenly across the surface, gently pressing larger berries into halves if desired.
