Ingredients:

Coffee Cake:

1/2 cup butter softened
1 cup sugar
2 eggs
1 tablespoon of lemon zest
2 tablespoons of fresh lemon juice
2 teaspoons vanilla extract
1 cup all-purpose flour*
1/2 teaspoon baking powder
1/2 cup sour cream
1 cup fresh blueberries

Coffee Cake Topping:

2/3 cup all-purpose flour**
1/3 cup brown sugar
1/4 cup butter melt

*Gluten-Free Alternative:

2/3 cup brown rice flour
1/4 cup tapioca stach
1/4 cup potato starch
1/2 teaspoon xantham gum

**Gluten-Free Topping Option: 
2/3 cup brown rice flour

Instructions:

Preheat oven to 350oF Butter a 8-inch square pan. The butter and sugar should be combined until light and fluffy. It takes approximately 6-7 minutes. Stir in the vanilla extract, lemon zest, and juice. Mix in the eggs, one at a.

Mix together the flour, baking powder, and water in a bowl. Combine the flour and baking powder. Transfer the blueberries to a small bowl. Mix the remaining dry ingredients into the bowl. Stir until combined. Mix in the sourcream, then add the rest of the dry ingredients. Mix well.
