Ingredients

For the Chicken

  • 4 chicken thighs or breasts (about 800 g / 1.76 lb)

  • 2 tablespoons soy sauce (about 30 g / 0.07 lb)

  • 1 tablespoon brown sugar (about 12 g / 0.03 lb)

  • 1 tablespoon honey (about 20 g / 0.04 lb)

  • 2 tablespoons vegetable oil (about 28 g / 0.06 lb)

  • 3 garlic cloves, minced (about 9 g / 0.02 lb)

  • 1 tablespoon fresh ginger, grated (about 6 g / 0.01 lb)

  • ½ teaspoon black pepper (about 1 g / 0.002 lb)

For the Garlic Ginger Broth

  • 3 cups chicken broth (about 720 g / 1.59 lb)

  • 3 garlic cloves, crushed (about 9 g / 0.02 lb)

  • 1 tablespoon fresh ginger slices (about 8 g / 0.02 lb)

  • 1 tablespoon soy sauce (about 15 g / 0.03 lb)

  • 1 teaspoon sesame oil (about 5 g / 0.01 lb)

  • 2 green onions, sliced (about 20 g / 0.04 lb)

Optional for Serving

  • Cooked jasmine rice or noodles (about 400 g / 0.88 lb)

  • Fresh cilantro or sesame seeds for garnish

Directions

  1. Prepare the chicken marinade
In a bowl, combine soy sauce, brown sugar, honey, minced garlic, grated ginger, and black pepper. Coat the chicken pieces with the mixture and let them marinate for about 15 minutes.

  2. Caramelize the chicken
Heat vegetable oil in a large skillet over medium heat. Place the chicken in the pan and cook for about 5–6 minutes per side until golden brown and slightly caramelized.

  3. Create the garlic ginger broth
In a separate pot, bring the chicken broth to a gentle simmer. Add crushed garlic, ginger slices, soy sauce, and sesame oil. Let the broth cook for about 8–10 minutes so the flavors infuse.

  4. Combine and finish
Once the chicken is cooked through, transfer it into the simmering broth and allow it to cook together for another 3–4 minutes.

  5. Serve the dish
Spoon the broth into bowls, place the caramelized chicken on top, and garnish with sliced green onions and sesame seeds.

  6. Enjoy
Serve hot with rice or noodles to soak up the delicious garlic ginger broth.

Notes

  • Extra caramelization: Let the chicken cook undisturbed for a few minutes to develop a deeper golden crust.

  • Adjust sweetness: Reduce the honey if you prefer a more savory flavor.

  • Spice option: Add chili flakes or a drizzle of chili oil for heat.

  • Protein variations: This recipe works well with chicken drumsticks or boneless thighs.

  • Storage: Store leftovers in the refrigerator for up to 3 days and gently reheat on the stovetop.
