When it comes to chicken, there are endless possibilities for recipes. But sometimes, you just want something simple and classic. This Cheesy Garlic Chicken recipe is the perfect weeknight meal. It’s packed with flavor, but comes together in just a few minutes. And best of all, it only requires a handful of ingredients that you probably already have in your kitchen.
Ingredients:
4 boneless, skinless chicken breasts
1/2 cup half and-half -OR light cream
1 – 1 1/2 cups Italian flavor bread crumbs
2 tbsp olive oil divided
FOR THE SAUCE:
2 tablespoons butter
2 tbsp finely chopped garlic
2 tablespoons flour
1/2 cup chicken stock
1 cup cream heavy cream preferred
1/4 cup grated Parmesan Cheese
2 oz softened cream cheese
1 tsp salt
1/4 tsp of white pepper
Instructions:
Use a meat mallet (smooth sides) to pound each breast on wax paper or plastic wrap to 1/4-inch thickness. This will result in a fairly large piece of chicken. To cut the pounded breasts in half, I use a meat mallet (smooth side).
Over medium heat, heat a large skillet. Add 1 tbs olive oil.
Dip each piece of chicken into the cream. Let the cream drip off. Dredge the chicken in the Italian breadcrumbs. The chicken will need to be cooked in two batches.
Place chicken in a hot skillet. Brown each side for about 5 minutes.
Brown remaining chicken in remaining oil with 1 tbsp of oil.
Place the chicken on a platter. Cover and bake in the oven at 200°F.
If you wish, wipe the skillet clean.
Place the butter on medium heat. Add the garlic.
Let garlic cook until fragrant (about 3-5 mins).
Mix the flour with the butter/garlic. Let this simmer for approximately 1 minute.
Slowly add the chicken stock, stirring constantly until you have no lumps
Slowly incorporate the cream and then add the salt. Cook for 5 minutes.
Mix the Parmesan with the cream cheese. Stir until the cream cheese is melted and incorporated into sauce.
Sauce pour over chicken, and serve immediately
