  • Cheesy Goodness: The combination of Velveeta cheese and shredded cheddar adds a creamy, gooey, and irresistible factor to this dish. Prepare to be hooked from the very first bite.

Ingredients:

  • 450g (1 lb) ground beef, 85% lean
  • 120g (½ cup) onions, diced
  • 439g (15.5 oz) can of Manwich sauce
  • 590ml (2 ½ cups) chicken broth
  • 411g (14.5 oz) can of diced tomatoes, not drained
  • 340g (¾ pound) farfalle pasta, uncooked
  • 227g (8 oz) Velveeta cheese, cubed
  • 160g (1 cup) corn, frozen or drained from a can
  • 170g (1 ½ cups) cheddar cheese, shredded

Directions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large, high-walled skillet or pot, cook and crumble the ground beef over medium-high heat for 2 minutes. Add the diced onions and continue cooking for an additional 5 minutes, or until the beef is browned and the onions are softened. Drain any excess grease.
  3. Add the Manwich sauce, chicken broth, and undrained diced tomatoes to the skillet. Bring the mixture to a gentle boil.
  4. Stir in the uncooked farfalle pasta, ensuring it is well combined with the sauce. Cover the skillet and let it boil gently until the pasta reaches the desired al dente texture. Remember to stir occasionally to prevent sticking. Allow for a few extra minutes of cooking time compared to the instructions on the pasta box, considering the gentle boiling method. To ensure readiness, taste-test a noodle before proceeding.
  5. Reduce the heat to low and stir in the corn. Add the cubed Velveeta cheese and cover the pot to allow the cheese to melt. Lift the cover occasionally and gently stir to combine all the ingredients.
  6. Transfer the mixture to a lightly greased 9 x 13 inch (23 x 33 cm) casserole dish.
  7. Sprinkle the shredded cheddar cheese evenly over the top.
  8. Cover the dish with foil and bake for 15 minutes. Then, remove the foil and continue baking for an additional few minutes or until the cheese is melted and bubbly.
  9. Once done, remove from the oven and let it cool slightly. Serve this delightful casserole alongside some warm cornbread and enjoy!

Notes:

  • Make-Ahead Method: You can assemble the casserole and top it with cheese ahead of time. Cover it and refrigerate for up to 3 days. Before baking, allow it to sit at room temperature for 30 minutes, then cover and bake at 350 degrees Fahrenheit (175 degrees Celsius) for 25 minutes.
  • Feel free to customize this recipe by adding your favorite vegetables or spices to enhance the flavors even further.
