Ingredients (Serves 4–6):
- 800 g (1.76 lb) chicken pieces (thighs or breasts)
- 2 tablespoons olive oil (30 g / 0.07 lb)
- 1 small onion, finely chopped (80 g / 0.18 lb)
- 3 garlic cloves, minced (15 g / 0.03 lb)
- 400 g (0.88 lb) chopped tomatoes
- 2 tablespoons tomato paste (30 g / 0.07 lb)
- 150 ml (0.33 lb) chicken broth
- 150 g (0.33 lb) mushrooms, sliced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- ½ teaspoon salt
- ¼ teaspoon black pepper
Directions:
- Heat olive oil in a large pan over medium heat. Add the chicken pieces and sear until golden on both sides. Remove and set aside.
- In the same pan, cook the chopped onion until soft. Add the garlic and sauté briefly until fragrant.
- Stir in the mushrooms and cook until they begin to soften.
- Add the chopped tomatoes, tomato paste, chicken broth, and herbs. Mix well.
- Return the chicken to the pan, ensuring it is coated with the sauce.
- Cover and let it simmer gently for about 25–30 minutes, or until the chicken is fully cooked and tender.
- Adjust seasoning if needed, then serve warm with your favorite side.
