Ingredients:

  • 6 boneless, skinless chicken breasts (about 1.8 kg / 4 lbs)
  • 240 ml (1 cup) heavy cream
  • 90g (1 cup) grated parmesan cheese
  • 180 ml (3/4 cup) chicken broth
  • 225g (8 oz) baby bella mushrooms, sliced
  • 85g (3 oz) fresh baby spinach
  • 80 ml (1/3 cup) white wine, such as Pinot Grigio
  • 3 cloves garlic, minced
  • 60g (1/4 cup) butter, divided
  • 2 tablespoons (30 ml) olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Directions:

  1. Cook the Chicken:
    Heat a large skillet over medium heat and add olive oil. Season the chicken breasts with half the salt and pepper, then place them in the skillet. Sauté for about 6-8 minutes on each side, or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C). Once cooked, remove the chicken from the skillet and set it aside.
  2. Sauté the Mushrooms:
    In the same skillet, add half the butter along with the sliced baby bella mushrooms. Sauté the mushrooms for about 4-5 minutes, stirring occasionally, until they turn golden and develop a rich color. Push the mushrooms to one side of the pan.
  3. Add the Garlic and Deglaze:
    To the cleared side of the skillet, add the minced garlic and sauté for about 20 seconds, being careful not to burn it. Then, pour in the white wine, using it to deglaze the pan. Let the mixture simmer for about 2-3 minutes, allowing the wine to reduce by half.
  4. Make the Creamy Sauce:
    Stir in the chicken broth, heavy cream, parmesan cheese, and the remaining butter. Allow the sauce to simmer gently, stirring occasionally, until it begins to thicken, about 5 minutes. Add the fresh baby spinach to the sauce, stirring until it wilts and the sauce reaches your desired consistency.
  5. Combine and Serve:
    Return the cooked chicken breasts to the skillet, nestling them into the sauce. Cook for another 2-3 minutes, until the chicken is heated through and well-coated with the creamy mushroom-spinach sauce. Serve the chicken with the sauce generously spooned over the top.
