INGREDIENTS:
Chicken
About 1.25 lbs boneless, skinless chicken breasts, cut in 1-inch pieces
3 tablespoons cornstarch
Salt and pepper to taste
Use 3-4 tablespoons of olive oil and more if needed
2 green onions, cut into thin rounds.
1 tablespoon sesame seed, optional garnish
Sauce
3/4 cup granulated Sugar
1/2 cup apple cider vinegar
1/4 cup ketchup
2 tablespoons low-sodium soy sauce
1 tablespoon sesame oil
1 tablespoon light brown sugar, packed
3 cloves garlic, finely chopped or pressed
2 tablespoons of cold water
1 tablespoon cornstarch
INSTRUCTIONS:
For the Sauce
Add all ingredients to a medium saucepan except water and cornstarch. Whisk to combine and bring to boil on medium heat.
Add the cornstarch and water to a small bowl. Stir to combine.
Mix the cornstarch and water in a saucepan. Reduce heat to low and let sauce simmer for approximately 5 minutes. While you prepare the chicken, whisk occasionally.
For the Chicken
In a large ziptop bag add the chicken and cornstarch. Season with salt and pepper. Seal and shake to coat the chicken.
In a large skillet, heat 3 to 4 tablespoons of olive oil and the chicken. Cook for 5 to 7 minutes or until chicken is cooked through. To ensure even cooking, stir and flip the skillet occasionally. Add an extra tablespoon of oil if the skillet appears dry during cooking.
Once the chicken is cooked, reduce the heat to low and add the sauce. Stir to coat evenly and let it simmer for about a minute.
You can garnish the dish with sesame seeds or green onions.
