Wet ingredients:

  • 3 ripe bananas mashed (1 1/3 cups mashed banana).
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 15 ounce can light coconut milk (about 1 2/3 cup coconut milk)
  • 2 tablespoons maple syrup

Dry Ingredients:

  • 2 1/4 cups gluten-free rolled oatmeal
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Mix-ins:

  • 1/2 cup unsweetened coconut shredded coconut plus 2 tablespoons of topping
  • 1/2 cup chopped walnuts
