- Rich, garlicky flavor with a silky texture
- Budget-friendly and perfect for busy days
- Authentic Italian comfort food
- Easily customizable with chili flakes or herbs
Ingredients (Serves 4):
- Spaghetti – 400 g / 0.88 lb
- Garlic – 5 cloves (25 g / 0.05 lb), thinly sliced
- Olive oil – 80 ml (80 g / 0.18 lb)
- Red chili flakes – 1 teaspoon (2 g / 0.004 lb)
- Fresh parsley – 15 g / 0.03 lb, finely chopped
- Salt – to taste
- Black pepper – to taste
- Pasta cooking water – about 120 ml (120 g / 0.26 lb)
Directions:
- Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Reserve some pasta water before draining.
- In a large pan, heat the olive oil over medium-low heat. Add the sliced garlic and cook gently until fragrant and lightly golden—be careful not to burn it.
- Stir in the chili flakes and cook for a few seconds to release their flavor.
- Add the cooked spaghetti directly to the pan along with a splash of reserved pasta water.
- Toss everything together until the pasta is well coated and a light, silky sauce forms.
- Season with salt and black pepper, then add chopped parsley.
- Toss once more and serve immediately.
Notes:
- Keep the heat low when cooking garlic to avoid bitterness
- The reserved pasta water helps create a smooth, glossy sauce
- Add grated cheese if you prefer a richer version (even though traditional recipes don’t always include it)
- You can include shrimp or mushrooms for variation
- Best enjoyed fresh and hot right after cooking
