My husband and I first tried this recipe a few years ago, and it quickly became one of our favorites. Ingredients:

  • 3-4 cups of cooked chicken, shredded (I use a rotisserie chicken) (450-600g)
  • 2 cups chicken broth (480ml)
  • 1/4 cup unsalted butter (57g)
  • 1 cup all-purpose flour (120g)
  • 1 1/4 tsp baking powder (6g)
  • 1/4 tsp salt (1.5g)
  • 1 cup milk (240ml)
  • 1 (10.5-oz) can cream of chicken soup (298g)

Directions:

  1. Preheat oven to 400ºF (200ºC).
  2. Melt butter in the microwave and pour into the bottom of a 9×13 inch pan.
  3. Spread the shredded chicken on top of the butter.
  4. In a bowl, whisk together the flour, baking powder, salt, and milk until smooth.
  5. Slowly pour the flour mixture over the chicken. Do not stir.
  6. In another bowl, whisk together the chicken broth and cream of chicken soup until smooth.
  7. Slowly pour the soup mixture over the flour mixture. Do not stir.
  8. Bake uncovered for 35 to 45 minutes, or until dumplings are golden brown.

Notes:

  • You can customize this recipe by adding your favorite herbs, spices, or veggies to the chicken mixture before baking.
  • Leftovers can be stored in the fridge for up to 3 days, or frozen for up to 3 months.
