  • 250 g (0.55 lb) cottage cheese
  • 2 large eggs (about 100 g / 0.22 lb)
  • 200 g (0.44 lb) all-purpose flour
  • 1 tablespoon baking powder (12 g / 0.03 lb)
  • ½ teaspoon salt (3 g / 0.007 lb)
  • 2 tablespoons olive oil or melted butter (30 g / 0.07 lb)
  • 1 tablespoon honey or sugar (15 g / 0.03 lb)

Directions:

  1. Preheat your oven to 180°C (350°F) and lightly grease or line a loaf pan.
  2. In a bowl, whisk together the eggs, cottage cheese, oil (or butter), and honey until well combined.
  3. In another bowl, mix the flour, baking powder, and salt.
  4. Gradually add the dry ingredients into the wet mixture, stirring until a smooth batter forms.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for about 35–40 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
  7. Let the bread cool slightly before slicing and serving.
