- 4 tbsp (56 g / 0.12 lb) unsalted butter
- ¾ cup (180 ml) warm whole milk
- ¼ cup (60 ml) heavy cream
- 1 tsp salt, or to taste
- ½ tsp freshly ground black pepper
For the Creamy Garlic Butter Shrimp
- 1½ lb (680 g) large shrimp, peeled and deveined
- 2 tbsp (28 g / 0.06 lb) unsalted butter
- 1 tbsp (15 ml) olive oil
- 6 garlic cloves (18 g / 0.04 lb), finely minced
- 1 cup (240 ml) heavy cream
- ½ cup (50 g / 0.11 lb) freshly grated Parmesan cheese
- ½ cup (120 ml) chicken or seafood broth
- 1 tsp Italian seasoning
- ½ tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp (15 ml) fresh lemon juice
- 2 tbsp (8 g / 0.02 lb) chopped fresh parsley
Optional Garnishes
- Extra grated Parmesan
- Chopped chives
- Fresh parsley
- Lemon wedges
Directions
1. Cook the Potatoes
Place the potato chunks in a large pot and cover with cold salted water. Bring to a boil and cook for 15–20 minutes, or until fork-tender. Drain thoroughly.
2. Mash Until Smooth
Return the potatoes to the warm pot. Add the butter, warm milk, heavy cream, salt, and pepper. Mash until smooth and creamy. Cover to keep warm.
3. Cook the Shrimp
Pat the shrimp dry with paper towels and season lightly with salt and pepper. Heat the olive oil and butter in a large skillet over medium-high heat. Cook the shrimp for 1–2 minutes per side until pink and just cooked through. Transfer them to a plate.
4. Make the Garlic Cream Sauce
Reduce the heat to medium. Add the minced garlic to the same skillet and cook for about 30 seconds until fragrant. Pour in the broth and let it simmer for a minute, scraping up any browned bits from the pan. Stir in the heavy cream, Parmesan cheese, Italian seasoning, and smoked paprika. Simmer for 3–5 minutes until the sauce thickens slightly.
5. Finish the Dish
Return the shrimp to the skillet and gently toss to coat them in the creamy sauce. Stir in the fresh lemon juice and chopped parsley. Cook for another minute until everything is heated through.
6. Serve
Spoon the mashed potatoes onto serving plates and top with the creamy garlic butter shrimp. Drizzle generously with the sauce and garnish with additional Parmesan, parsley, or chives. Serve immediately.
Notes
- Don’t overcook the shrimp: Shrimp cook quickly and should be removed from the heat as soon as they turn pink to keep them tender.
- Choose the right potatoes: Yukon Gold potatoes create naturally creamy mashed potatoes, while Russets produce a lighter, fluffier texture.
- Add vegetables: Serve with steamed broccoli, asparagus, green beans, or sautéed spinach for a complete meal.
- Customize the sauce: Stir in spinach, mushrooms, sun-dried tomatoes, or a pinch of crushed red pepper flakes for extra flavor.
- Storage: Refrigerate leftovers in an airtight container for up to 2 days.
- Reheating: Warm gently over low heat, adding a splash of milk or broth to loosen the sauce if needed.
- Nutrition: This dish is rich in protein from the shrimp and provides a comforting balance of creamy potatoes and flavorful garlic butter sauce, making it a satisfying meal for any occasion.
