Whenever we’re planning a Mediterranean dinner at home, my husband always reminds me not to forget the Tirokafteri. The first time I made it, I expected it to be just another cheese dip, but after one bite, we were completely hooked. Now it’s become our favorite appetizer for family gatherings and weekend lunches. We love setting out a bowl with warm pita, crunchy cucumbers, and olives, and somehow it always disappears before dinner is even served. It’s one of those simple recipes that makes every meal feel a little more special.

Ingredients
Makes 6–8 servings
- 0.66 lb (300 g) feta cheese, crumbled
- 0.22 lb (100 g) Greek yogurt, softened cream cheese, or a combination of both
- 0.18 lb (80 g) roasted red peppers, drained and chopped
- 0.01 lb (6 g) garlic, minced (2 cloves)
- 0.04 lb (20 g) extra virgin olive oil
- 0.03 lb (15 g) fresh lemon juice
- 0.01 lb (5 g) hot chili pepper, finely chopped, or ½ teaspoon crushed red pepper flakes
- 0.003 lb (1 g) smoked paprika (optional)
- 0.003 lb (1 g) freshly ground black pepper
- 0.01 lb (5 g) chopped fresh parsley or oregano, for garnish
- Extra olive oil for drizzling before serving
Directions
- Place the crumbled feta, Greek yogurt, roasted red peppers, garlic, lemon juice, olive oil, and chili pepper into a food processor.
- Blend until the mixture becomes smooth and creamy. If you prefer a more rustic texture, pulse only a few times so small pieces of feta remain.
- Taste the dip and adjust the seasoning. Add more chili for extra heat, additional lemon juice for brightness, or a drizzle of olive oil if you’d like a silkier consistency.
- Transfer the dip to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to develop.
- Just before serving, drizzle with extra virgin olive oil and sprinkle with smoked paprika and fresh parsley or oregano.
- Enjoy with warm pita bread, toasted baguette slices, fresh vegetables, grilled chicken, lamb, seafood, or as part of a Mediterranean appetizer platter.
Notes
- Use high-quality Greek feta made from sheep’s milk for the most authentic flavor and creamy texture.
- Roasted red peppers from a jar work well, but homemade roasted peppers add an even deeper smoky flavor.
- For a milder dip, reduce the amount of chili or omit it altogether.
- If the dip is too thick, blend in a teaspoon or two of olive oil or a splash of water until you reach your desired consistency.
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Stir before serving if any liquid separates.
- Tirokafteri is delicious as a spread for wraps and sandwiches or spooned over grilled vegetables, burgers, or roasted potatoes for an extra burst of Mediterranean flavor.
