Prep Time: 15 mins
Cook Time: 20 mins
Total Time: 35 mins
Ingredients:
5 eggs
12 red bell pepper chopped
Half a green bell pepper chopped
1/4 teaspoon salt
1/4 teaspoon of pepper or to taste
8 slices bacon fried
Refrigerated 8-ounce crescent roll, I used 1 can (8 oz.) Pillsbury crescents
1 cup cheddar cheese shredded
1 egg per egg wash, optional
Instructions:
Preheat oven to 375 F.
Mix the eggs, chopped peppers and salt in a bowl. Make sure to scramble the eggs in a skillet. The same skillet can be used to cook the bacon; just drain the fat.
Place the crescent rolls on parchment peppers, as a star in the photos above.
Place a piece bacon on each crescent roll. Place half the cheese around each ring. Place the scrambled eggs on top of the ring.
Fold the crescents in half. If you like, brush the egg wash on the rings. I did it because it gives them a golden colour.
Bake for 20 min or until crescents are golden brown and cooked.
If desired, garnish with parsley. Serve warm.
