This potato torte has become one of those recipes our little family gets excited about whenever it appears on the dinner table. My husband is a big fan of crispy roasted potatoes, so I knew he would love the golden edges and buttery layers. The first time I made it, I wasn’t sure how quickly it would disappear, but everyone went back for another slice. Now it’s one of my favorite recipes when we have guests because it looks elegant, yet it uses ingredients we almost always have in the kitchen.

Ingredients

  • 1 kg / 2.20 lb Yukon Gold or yellow-fleshed potatoes, thinly sliced
  • 40 g / 0.09 lb unsalted butter, melted
  • 30 g / 0.07 lb extra-virgin olive oil
  • 25 g / 0.06 lb balsamic vinegar
  • 2 garlic cloves, finely minced (about 6 g / 0.01 lb)
  • 2 tsp fresh thyme leaves (about 4 g / 0.01 lb)
  • 1 tsp fine sea salt (about 6 g / 0.013 lb)
  • 1/2 tsp freshly ground black pepper (about 1 g / 0.002 lb)
  • 35 g / 0.08 lb finely grated Parmesan cheese
  • 1 tsp honey (about 7 g / 0.02 lb), optional
  • Fresh thyme, for garnish
  • Flaky sea salt, optional

Directions

  1. Prepare the oven: Heat the oven to 200°C / 400°F. Lightly grease a 23-cm / 9-inch round baking dish or oven-safe skillet.
  2. Slice the potatoes: Scrub and peel the potatoes if preferred, then slice them very thinly and evenly. A mandoline makes this step easier, but a sharp knife works too.
  3. Mix the seasoning: In a large bowl, combine the melted butter, olive oil, balsamic vinegar, minced garlic, thyme, salt, pepper, and honey if using. Whisk until well blended.
  4. Coat the potatoes: Add the sliced potatoes and gently toss until the seasoning mixture is distributed throughout. Take care not to break the slices.
  5. Layer the torte: Arrange the potato slices in overlapping circles inside the prepared dish. Keep the layers fairly compact and sprinkle small amounts of Parmesan between a few layers.
  6. Compact the layers: Once all the potatoes are arranged, gently press down on the surface to create a firm, even torte.
  7. Bake covered: Cover the dish with foil and bake for about 35–40 minutes, allowing the potatoes to soften and cook through.
  8. Brown and crisp: Remove the foil and return the torte to the oven for another 20–25 minutes, until the top is deeply golden and crisp and a knife slides easily through the center.
  9. Rest before slicing: Remove from the oven and let the torte rest for approximately 10–15 minutes. This allows the layers to settle and makes it easier to cut clean wedges.
  10. Garnish and serve: Finish with fresh thyme and a pinch of flaky sea salt. Cut into wedges and serve warm.

Notes

  • Use evenly sliced potatoes: Consistent slices are important for even cooking and neat layers.
  • Choose waxy potatoes: Yukon Gold or similar yellow potatoes hold their shape well while becoming tender and creamy inside.
  • For extra crisp edges: Avoid overcrowding the pan and make sure the top layer is lightly coated rather than wet.
  • Balsamic variation: For a more pronounced balsamic flavor, add a light drizzle of balsamic reduction just before serving.
  • Cheese substitutions: Parmesan can be replaced with Pecorino Romano, Gruyère, or another finely grated hard cheese.
  • Herb variations: Rosemary, sage, or oregano can be used alongside or instead of thyme.
  • Make ahead: The torte can be assembled several hours in advance and refrigerated. Allow it to sit at room temperature for about 15–20 minutes before baking.
