Even on busy evenings, I know I can make this dish quickly and still bring everyone to the table smiling.

Ingredients
-
1.5 lb carrots, peeled and sliced into thick coins (≈ 680 g / 1.5 lb)
-
1 ½ tbsp olive oil (≈ 22 g / 0.05 lb)
-
3 tbsp finely grated Parmesan cheese (≈ 15 g / 0.03 lb)
-
¾ tsp garlic powder (≈ 2 g / 0.004 lb)
-
½ tsp smoked paprika (≈ 1 g / 0.002 lb)
-
Salt and ground black pepper, as needed
-
Fresh parsley, chopped for topping (≈ 5 g / 0.01 lb)
Directions:
-
Heat your oven to 425°F (220°C) and prepare a baking tray by lining it with parchment paper.
-
Add the carrot slices to a pot of salted water and cook until they are tender enough to pierce easily with a fork, about 10–12 minutes. Drain and allow them to cool slightly.
-
Arrange the carrots on the prepared tray and press each piece down gently using the base of a glass or measuring cup to flatten them.
-
Brush or drizzle olive oil over the carrots. Sprinkle with garlic powder, smoked paprika, salt, and pepper. Finish by scattering Parmesan evenly across the top.
-
Bake for 20–25 minutes, turning once halfway through cooking, until the edges become crisp and lightly browned.
-
Remove from the oven, sprinkle with chopped parsley, and serve warm.
Notes:
-
Cheese alternatives: Pecorino or nutritional yeast can replace Parmesan for a different flavor profile.
-
Extra crispiness: Broil the carrots for the last 2–3 minutes of cooking.
-
Seasoning swaps: Try cumin, chili flakes, or Italian herbs to change the taste.
-
Carrot size tip: Cut evenly sized rounds so they cook at the same rate.
-
Nutrition tip: Carrots are naturally rich in beta-carotene and fiber, making this a wholesome addition to your meal.
