- 1 medium zucchini, grated and squeezed dry (200 g / 0.44 lb)
- 2 medium carrots, finely grated (140 g / 0.31 lb)
- 1 cup finely chopped broccoli florets (90 g / 0.20 lb)
- ½ cup finely diced onion (75 g / 0.17 lb)
- 2 garlic cloves, minced (8 g / 0.02 lb)
- 2 large eggs
- ¾ cup panko breadcrumbs (45 g / 0.10 lb)
- ½ cup grated Parmesan cheese (50 g / 0.11 lb)
- 2 tablespoons chopped fresh parsley (8 g / 0.02 lb)
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- ½ teaspoon ground cumin
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper

Directions
