- 1 large egg — about 2 oz (55 g)
- 2 tbsp (16 g / 0.6 oz) all-purpose flour
- 1/3 cup (35 g / 1.2 oz) grated Parmesan cheese
- 1/2 tsp (2 g) garlic powder
- 1/2 tsp (1 g) smoked paprika
- 1/2 tsp (3 g) salt
- 1/4 tsp (1 g) black pepper
- 1 tbsp (15 ml) olive oil
Optional Filling
- 4–8 eggs, depending on the size of your nests
- 1/2 cup (50 g / 1.8 oz) shredded cheddar, mozzarella, or Gruyère
- 1/2 small avocado — about 2.5 oz (70 g), diced
- 2 tbsp (8 g / 0.3 oz) chopped fresh parsley or chives
- Chili flakes, to taste
Directions
- Prepare the sweet potatoes: Preheat your oven to 400°F (200°C). Peel the sweet potatoes and grate them using the large holes of a box grater or a food processor fitted with a shredding attachment.
- Remove excess moisture: Transfer the shredded sweet potato to a clean kitchen towel and squeeze firmly to remove as much liquid as possible. This step is important for getting crispy edges.
- Make the mixture: Place the shredded sweet potatoes in a large bowl. Add the egg, flour, Parmesan, garlic powder, smoked paprika, salt, pepper, and olive oil. Toss everything together until the strands are evenly coated.
