They’re tender in the center with lightly crisp edges and make a wonderful appetizer, snack, side dish, or easy vegetarian treat. Serve them with your favorite dipping sauce for a bite that disappears quickly!
These zucchini bites have become one of those recipes my family asks for whenever we have extra zucchini in the kitchen. My husband was initially skeptical about zucchini being the star of a snack, but after trying the first bite, he immediately reached for another.
I love making them when I want something quick and comforting without preparing a complicated meal. The combination of garlic, Parmesan, fresh herbs, and golden zucchini makes the kitchen smell incredible while they cook. We usually put a plate in the center of the table with a creamy dipping sauce, and somehow the bites are gone before I even realize it!

Ingredients
Makes about 18–20 bites
- 3 medium zucchini — about 600 g (1.32 lb)
- 2 large eggs — about 100 g (0.22 lb)
- ¾ cup grated Parmesan cheese — about 75 g (0.17 lb)
- ¾ cup breadcrumbs — about 75 g (0.17 lb)
- 3 garlic cloves, finely minced — about 12 g (0.03 lb)
- 2 tablespoons finely chopped fresh parsley — about 8 g (0.02 lb)
- ½ teaspoon dried oregano — about 1 g (0.002 lb)
- ½ teaspoon salt — about 3 g (0.006 lb)
- ¼ teaspoon black pepper — about 1 g (0.002 lb)
- ¼ teaspoon red pepper flakes, optional — about 0.5 g (0.001 lb)
- 1 tablespoon olive oil — about 15 g (0.03 lb)
Optional Dipping Sauce
- ½ cup Greek yogurt — about 120 g (0.26 lb)
- 1 small garlic clove, grated — about 4 g (0.009 lb)
- 1 teaspoon lemon juice — about 5 g (0.01 lb)
- 1 tablespoon chopped fresh parsley — about 4 g (0.009 lb)
- Pinch of salt
Directions
- Prepare the zucchini. Wash the zucchini and grate it using the large holes of a box grater. Place the grated zucchini in a clean kitchen towel or cheesecloth.
- Remove excess moisture. Squeeze the zucchini firmly to release as much liquid as possible. This step is important because overly wet zucchini can make the bites soft and difficult to shape.
- Combine the mixture. Transfer the drained zucchini to a large bowl. Add the eggs, Parmesan, breadcrumbs, minced garlic, parsley, oregano, salt, black pepper, and red pepper flakes if using.
- Mix thoroughly. Stir everything together until the ingredients are evenly distributed and the mixture is moist but firm enough to shape. If it feels too wet, add another tablespoon or two of breadcrumbs.
- Shape the bites. Scoop out small portions of the mixture and roll them into balls or gently flatten them into small patties. Try to keep them similar in size so they cook evenly.
- Chill if needed. For easier handling, place the shaped bites in the refrigerator for about 15–20 minutes before cooking.
- Pan-fry. Heat the olive oil in a large nonstick skillet over medium heat. Arrange the zucchini bites in the pan without overcrowding them.
- Cook until golden. Fry for approximately 3–4 minutes on each side, carefully turning them with a spatula, until they are golden brown and cooked through.
- Drain. Transfer the cooked bites to a plate lined with paper towels or place them on a wire rack to remove excess oil.
- Prepare the dip. Stir together the Greek yogurt, garlic, lemon juice, parsley, and salt in a small bowl.
- Serve. Serve the zucchini garlic bites warm with the creamy garlic dip on the side. Garnish with additional parsley and Parmesan if desired.
Notes
- Drain the zucchini well: This is the most important step for achieving bites that hold together and become nicely golden.
- Breadcrumb adjustment: Depending on how much moisture remains in your zucchini, you may need a little extra breadcrumb mixture.
- Cheese options: Parmesan can be replaced with Pecorino Romano, cheddar, or another flavorful grated cheese.
- Extra flavor: Add Italian seasoning, fresh basil, smoked paprika, or a pinch of chili flakes.
- Baking option: Arrange the bites on a lightly greased baking sheet and bake at 425°F (220°C) until golden, turning once halfway through.
- Air fryer option: Cook at approximately 375°F (190°C) for about 10–14 minutes, turning halfway through.
- Make them extra crispy: Avoid overcrowding the skillet or air fryer basket so hot air can circulate around each bite.
- Storage: Refrigerate leftovers in an airtight container for up to 3 days.
- Reheating: Reheat in an oven, air fryer, or skillet rather than the microwave to help restore their crisp edges.
- Serving ideas: Pair them with marinara sauce, garlic yogurt, ranch dressing, spicy mayo, or a fresh tomato salad.
