Ingredients
Makes about 4 servings
- 3 large cucumbers, sliced into very thin rounds (900 g | 2.0 lb)
- 2 tablespoons olive oil (30 ml)
- 1 packet ranch seasoning mix (28 g | 0.06 lb)
- ¾ teaspoon fine sea salt (4 g | 0.009 lb), or to taste
- ½ teaspoon freshly ground black pepper (1 g | 0.002 lb)
Directions
- Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper for easy cleanup.
- Wash the cucumbers thoroughly and slice them into very thin, even rounds—about ⅛ inch (3 mm) thick. Uniform slices help the chips bake evenly.
- Transfer the cucumber slices to a large mixing bowl. Drizzle with olive oil, then sprinkle over the ranch seasoning, salt, and black pepper. Toss gently until every slice is lightly coated.
- Arrange the cucumber slices in a single layer on the prepared baking sheet. Avoid overlapping them so they crisp up properly.
- Bake for 15–20 minutes, checking frequently during the final few minutes. Remove any slices that become golden and crisp while allowing thicker pieces to continue baking if needed.
- Let the cucumber chips cool on the baking sheet for several minutes. They will continue to crisp as they cool.
- Serve immediately for the best texture and enjoy on their own or with your favorite dipping sauce.
Notes
- Slice the cucumbers as evenly as possible using a sharp knife or mandoline for consistent crispiness.
- Pat the cucumber slices dry with paper towels before seasoning to remove excess moisture and help them crisp up.
- If your chips aren’t crisp enough, reduce the oven temperature to 250°F (120°C) after baking and continue drying them for an additional 10–15 minutes.
- Try different seasoning blends like garlic parmesan, Cajun, taco seasoning, smoked paprika, or everything bagel seasoning.
- Store cooled chips in an airtight container at room temperature for up to 1 day. For maximum crunch, they’re best enjoyed fresh.
- Serve alongside burgers, wraps, sandwiches, or enjoy them as a healthy afternoon snack.
