This Crustless Spinach Quiche is so easy to make and is packed with flavor! It’s a great recipe for breakfast, brunch, or even dinner. And, it’s a healthier option since it’s crustless. This quiche is made with eggs, spinach, cheese, and diced tomatoes. You can easily customize it to your liking by adding in different vegetables or meats.

Ingredients:

1 tablespoon additional virgin olive oil
1 small sweet onion, chopped
4 ounces mushrooms, sliced
2 cloves minced garlic
10 ounces chopped frozen spinach, thawed, and drained
6 oz crumbled Feta cheese
8 ounces shredded cheddar cheese
5 large eggs
1/2 cup milk (1% or 2% or whole)
1/4 teaspoon table salt
1/4 teaspoon black pepper

Instructions:

Lightly grease a 9-inch deep-dish pie plate and heat oven to 350°F.

In a large skillet, heat olive oil on medium-high heat. Sauté onion and mushrooms until softened. Cook for 1 more minute. Stir in the spinach, cheddar cheese, and feta. Place the mixture in a pie plate.

Mix together eggs, milk and salt in a bowl. In a bowl, whisk together eggs, milk and salt. Pour the egg mixture onto the prepared pie plate.

Bake eggs in the oven for 40-45 minutes until they are set. Allow to cool for 10 minutes before cutting and serving.
