  • 2 tbsp (30 ml) soy sauce
  • 1 tbsp (15 ml) sesame oil
  • 1–2 tbsp (15–30 ml) lime juice
  • 1 tbsp (15 g) honey or maple syrup
  • 1–2 tsp (5–10 g) chili paste or sriracha (adjust to taste)
  • 1 garlic clove, finely grated
  • 2–4 tbsp (30–60 ml) warm water (to loosen sauce)

Optional Garnish

  • Sesame seeds

Directions

  1. Wash the cucumbers and slice them into thin rounds or half-moons, depending on preference.
  2. Lightly sprinkle the cucumbers with salt and let them sit for 10 minutes. This helps draw out excess water and keeps them crisp. Drain any liquid before mixing.
  3. In a bowl, whisk together peanut butter, soy sauce, sesame oil, lime juice, honey, chili paste, and grated garlic until smooth.
  4. Slowly add warm water, one tablespoon at a time, until the sauce becomes creamy and pourable.
  5. Add the cucumbers to a mixing bowl and pour the spicy peanut sauce over them.
  6. Toss well until all cucumber slices are evenly coated.
  7. Sprinkle with sesame seeds, crushed peanuts, or fresh herbs if desired.
  8. Serve immediately for maximum crunch or chill for 10–15 minutes for deeper flavor.
