My husband and I love this easy burrito casserole recipe because it’s so simple to make yet so delicious. One evening, we were both craving Mexican food but didn’t feel like going out. So, I searched for a recipe that would satisfy our cravings and stumbled upon this one. I was a bit skeptical at first, but as soon as I took the first bite, I was hooked. The combination of flavors was amazing, and the fact that it only took about 30 minutes to make was a bonus. Since then, we have made this dish numerous times, and even our picky eaters love it. It has become a staple in our household, and I’m sure it will be in yours too.

Ingredients:

  • 1 small onion, chopped
  • 454 g (1 lb) of ground beef
  • 1 pack of taco seasoning
  • 1 can cream of mushroom soup, undiluted
  • 1 can of refried beans
  • ½ cup of sour cream
  • 283 g (10 oz) of shredded Mexican blend cheese
  • 1 pack of large flour tortillas

Directions:

  1. Preheat your oven to 180°C (350°F).
  2. In a large skillet over medium heat, cook the ground beef and onion until the beef is brown. Drain any excess grease.
  3. Add the taco seasoning and refried beans to the skillet and cook until heated through.
  4. In a separate bowl, mix the mushroom soup and sour cream.
  5. In a baking dish, spread half of the mushroom mixture on the bottom.
  6. Place three layers of tortillas on top, tearing them if necessary to fit the dish.
  7. Add the ground beef mixture on top of the tortillas and sprinkle with one cup of shredded cheese.
  8. Repeat the layers, ending with the remaining cheese.
  9. Bake in the preheated oven for about 20 minutes or until the cheese is melted and bubbly.
  10. Serve the burrito casserole immediately and enjoy!

Notes:

  • You can add your favorite toppings, such as diced tomatoes, avocado, jalapenos, or cilantro.
  • If you don’t have Mexican blend cheese, you can use cheddar or Monterey Jack.
  • Leftovers can be stored in the fridge for up to three days or frozen for up to three months. Reheat in the oven or microwave before serving.
