Why This Tortilla Chip Enchiladas Recipe is a Must-Try

  • Perfect for feeding a crowd or as a make-ahead meal.

Ingredients:

  • 3 cups shredded cheese
  • 1 28-ounce can of red enchilada sauce

  5. Add the beef mixture to the bowl with the chips and stir until everything is evenly combined.
  6. Pour the entire can of enchilada sauce over the mixture and add 1 cup of shredded cheese. Gently mix everything together.
  7. Prepare a baking dish by coating it with non-stick spray.
  8. Pour the tortilla chip enchilada mixture into the baking dish and spread it out evenly.
  9. Sprinkle the remaining 2 cups of shredded cheese over the top of the mixture, making sure it’s fully covered.
  10. Cover the baking dish with foil and bake for 50 minutes.
  11. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  12. Let the enchiladas cool for a few minutes before serving.
