  • 1/3 cup (35g) breadcrumbs
  • 1/2 cup (50g) freshly grated parmesan cheese

  • 1 tablespoon finely chopped fresh parsley

  • 1/2 teaspoon black pepper

Directions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. After grating the zucchini, transfer it to a clean towel and bundle up the towel to squeeze out any excess moisture.
  3. In a large bowl, mix together the squeezed zucchini, garlic, egg, breadcrumbs, parmesan cheese, chives, parsley, salt, and pepper until well combined.
