Ingredients:
SHRIMP:
1 lb. Shrimp, cleaned, deveined and tails removed
Kosher salt
Freshly ground black pepper
1 c. all-purpose flour
2 large eggs, beaten
2 c. Panko bread crumbs
1 tbsp. Old Bay seasoning
2 tbsp. milk
Vegetable oil for frying
For serving, lemon wedges
SPICY TARTAR SAUCE:
1 c. mayonnaise
2 tbsp. Pickle of finely chopped dill
2 tbsp. Capers
2 tsp. Dijon mustard
2 tsp. hot sauce
Take 1/2 lemon and muddle it.
Directions:
Step 1 Pat the shrimp dry with paper towels. Season with salt and pepper. Line a large baking sheet with paper towels and place a wire cooling rack on top.
Step 2Place the flour, eggs, panko, and salt in three separate bowls. Mix Old Bay and panko together, then whisk in milk to make eggs.
Step 3 Dip each shrimp one at a while in flour, egg, and panko. Press to coat. Add enough oil to 1 inch up the sides of a large saucepan on medium heat. Heat oil to 375°F. In batches, add the shrimp to the oil and cook for about 1 to 2 mins. Place the shrimp in the oil with a slotted spoon. Add more salt to the pan immediately. Continue with the remaining shrimp.
Step 4: Make sauce. In a medium bowl combine mayonnaise with pickles, mustard, capers and lemon juice. Keep refrigerated until ready for use.
Step 5 Serve shrimp warm with spicy tartar sauce, lemon wedges and butter.
