Easy Crockpot Chicken and Dumplings Recipe

Crockpot chicken and dumplings are a classic comfort dish that is ideal for any cold day. For those who haven’t tried this recipe, you’re in store for a hearty and delicious meal! The biscuits on top make it even more comforting and filling, while the cream of chicken soup and onion soup mix give it that signature flavor.

INGREDIENTS:

1 1/2 lb small-to medium chicken thighs 5-6 chicken legs
1/2 teaspoon kosher Salt
1/2 teaspoon ground black pepper
1 bay leaf
1 teaspoon dried parsley
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
1 teaspoon garlic powder
1 3/4 cups low sodium chicken broth
1 carrot sliced and peeled
1 onion chopped
1 can 10.5 ounces cream chicken soup
1/2 cup frozen peas
16.3 ounces refrigerated biscuit batter (or 8 large biscuits).
For garnish, chopped fresh parsley may be used.

Directions: 

Salt and pepper both sides of the chicken legs and place in the bottom pot.

You can also add bay leaf, parsley and rosemary to the mixture.

Add the chicken broth, carrots, onions, and cream of Chicken Soup. To incorporate all the ingredients, gently stir the top. You don’t need to mix everything together.

Cover the crockpot and cook on high for 3-4 hrs or until the chicken is easily shredded and reaches 165°F.

Add the frozen peas. If you wish, you can shred the chicken. Mix well.

Cut each biscuit in four pieces by opening a can of biscuit dough. Each biscuit should be rolled into a ball. Place the pieces of biscuits on top of the other ingredients in the crockpot.

16.3 ounces refrigerated biscuit batter

Turn the crockpot on high and replace the lid. Cook the biscuits for about 1 to 2 hours, depending on the size of your crockpot. If possible, don’t lift the lid. You can see through the glass if you have a glass lid. When the biscuits are done, they should look matte. To ensure that the biscuits are cooked through, cut into one.

Once the biscuits have been baked, season them according to your taste.
