Buttery pastry surrounds a rich filling of creamy cheese, salty feta, and tender spinach, creating a delicious contrast between crisp layers and a soft, flavorful center. Ingredients

Makes 10–12 cream bombs

For the Filling

  • 180 g / 0.40 lb fresh spinach, roughly chopped
  • 150 g / 0.33 lb cream cheese, softened
  • 100 g / 0.22 lb feta cheese, crumbled
  • 1 small garlic clove, finely minced (about 3 g / 0.007 lb)
  • 1/4 tsp black pepper (about 0.5 g / 0.001 lb)
  • 1/4 tsp salt (about 1.5 g / 0.003 lb)
  • 1/4 tsp dried oregano (about 0.5 g / 0.001 lb)
  • 1 tbsp grated Parmesan cheese (about 8 g / 0.02 lb)

For the Pastry

  • 320 g / 0.71 lb puff pastry, thawed
  • 35 g / 0.08 lb unsalted butter, melted
  • 1 large egg for brushing (about 50 g / 0.11 lb)
  • 1 tbsp sesame seeds (about 9 g / 0.02 lb), optional

Directions

  1. Prepare the spinach: Heat a large skillet over medium heat. Add the chopped spinach and cook briefly until wilted. Transfer it to a bowl and allow it to cool slightly. Gently squeeze out excess moisture so the filling doesn’t become watery.
  2. Make the creamy filling: Add the softened cream cheese, crumbled feta, garlic, Parmesan, oregano, salt, and black pepper to the spinach. Mix until everything is evenly combined and creamy.
  3. Prepare the pastry: Place the thawed puff pastry on a lightly floured surface. Gently roll it out if needed, then cut it into approximately 10–12 equal squares.
  4. Fill the pastry: Spoon a small portion of the spinach and cheese mixture into the center of each pastry square. Avoid overfilling, as the filling can escape during baking.
  5. Shape the bombs: Bring the corners of each pastry square toward the center and pinch the edges together firmly to seal the filling inside. Gently shape each piece into a round or slightly domed bundle.
  6. Chill briefly: Arrange the filled pastries on a parchment-lined baking sheet and refrigerate them for about 10–15 minutes. Chilling helps the pastry maintain its shape and encourages flaky layers during baking.
  7. Add the finishing touches: Brush each pastry lightly with beaten egg. Brush or drizzle a little melted butter over the tops, then sprinkle with sesame seeds if using.
  8. Bake: Preheat the oven to 200°C / 400°F. Bake the pastries for approximately 18–23 minutes, or until puffed and deeply golden brown.
  9. Cool and serve: Allow the cream bombs to rest for a few minutes before serving. The filling will be very hot straight from the oven, so give it time to cool slightly.

Notes

  • Keep the pastry cold: Puff pastry works best when it stays chilled before baking. If it becomes soft while you’re assembling the bombs, place it in the refrigerator for a few minutes.
  • Remove excess spinach moisture: This is especially important when using frozen spinach. Thaw it completely and squeeze it very well before adding it to the filling.
  • Cheese options: Ricotta can be mixed with the cream cheese for an even softer filling, while goat cheese can add extra tanginess.
  • Add more flavor: A pinch of red pepper flakes, lemon zest, dill, or fresh parsley can brighten the filling.
  • Seal carefully: Make sure the pastry edges are firmly pinched together to prevent the creamy filling from leaking during baking.
  • For extra crunch: Sprinkle sesame, poppy, or everything-bagel seasoning over the egg wash before baking.
  • Make ahead: The filled pastries can be assembled and refrigerated for several hours before baking.
  • Storage: Store cooled leftovers in an airtight container in the refrigerator for up to 3 days. Reheat them in the oven or air fryer to restore their crisp texture.
