  • 2 teaspoons chili powder (8 g)
  • 2 teaspoons kosher salt (10 g)
  • 1/4 teaspoon freshly ground black pepper (1 g)
  • 1/2 cup uncooked long grain white rice (100 g)
  • 2 tablespoons tomato paste (30 g)
  • 1 can (14.5 ounces) diced tomatoes with juice (411 g)
  • 1 cup water (240 ml)
  • 1 teaspoon Worcestershire sauce (5 ml)
  • 1 cup shredded cheddar cheese, optional (115 g) (not shown in the photo)

Directions:

  1. Heat olive oil in a skillet with a tight-fitting cover over medium-high heat.
  2. Add diced onion, green bell pepper, minced garlic, ground beef, dry mustard, chili powder, kosher salt, and black pepper. Sauté until the ground beef is no longer pink, breaking it up as it cooks. If needed, drain any excess grease.
  3. Stir in the uncooked white rice and cook for two minutes, allowing the rice to absorb the flavors.
  4. Add tomato paste and cook for an additional minute.
  5. Pour in the diced tomatoes with juice, water, and Worcestershire sauce. Stir everything together, cover the skillet, and simmer for 20 minutes.
