This salad has become a little family favorite in our kitchen because it’s one of those dishes everyone can enjoy. My husband usually reaches for hearty sides first, but the first time I served these green beans with creamy feta and a bright dressing, he kept going back for more. I love making it when we want something fresh alongside dinner, and it has become especially popular at family gatherings because it can be prepared ahead and served at room temperature.

Ingredients
Serves 4
For the Salad
- 500 g / 1.10 lb fresh green beans, trimmed
- 200 g / 0.44 lb cherry tomatoes, halved
- 100 g / 0.22 lb feta cheese, crumbled
- 60 g / 0.13 lb red onion, thinly sliced
- 25 g / 0.06 lb fresh parsley, chopped
- 15 g / 0.03 lb fresh mint leaves, chopped
- 30 g / 0.07 lb toasted almonds, roughly chopped, optional
For the Dressing
- 45 g / 0.10 lb extra-virgin olive oil
- 30 g / 0.07 lb fresh lemon juice
- 1 small garlic clove, finely minced (about 3 g / 0.007 lb)
- 1 tsp Dijon mustard (about 5 g / 0.01 lb)
- 1 tsp honey (about 7 g / 0.02 lb)
- 1/2 tsp dried oregano (about 1 g / 0.002 lb)
- 1/4 tsp salt (about 1.5 g / 0.003 lb)
- 1/4 tsp freshly ground black pepper (about 0.5 g / 0.001 lb)
Directions
- Cook the green beans: Bring a large pot of salted water to a boil. Add the trimmed green beans and cook for about 3–5 minutes, until they are tender but still pleasantly crisp.
- Cool the beans: Drain the green beans immediately, then transfer them to a bowl of ice water. Let them sit for a few minutes to stop the cooking process and preserve their bright color. Drain thoroughly and pat dry.
- Prepare the dressing: In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, garlic, oregano, salt, and black pepper until the mixture is smooth and well combined.
- Combine the vegetables: Place the cooled green beans in a large serving bowl. Add the halved tomatoes, sliced red onion, parsley, and mint.
- Dress the salad: Pour the lemon dressing over the vegetables and gently toss until everything is evenly coated.
- Add the feta: Sprinkle the crumbled feta over the top. Add the toasted almonds if using, taking care not to overmix so the feta maintains some texture.
- Rest and serve: Let the salad sit for about 10–15 minutes before serving. This gives the green beans time to absorb the dressing and allows the flavors to come together.
Notes
- Keep the beans crisp: Avoid overcooking them. They should be tender enough to bite through while still retaining some crunch.
- Fresh or frozen: Fresh green beans are ideal, but frozen beans can work in a pinch. Cook them according to the package directions and cool them quickly afterward.
- Cheese substitutions: Goat cheese or ricotta salata can be used instead of feta for a different flavor.
- Add more vegetables: Cucumber, roasted red peppers, olives, or thinly sliced radishes make delicious additions.
- Herb variations: Try fresh basil, dill, or cilantro if you don’t have parsley or mint available.
- For extra crunch: Toasted walnuts, pistachios, sunflower seeds, or almonds work beautifully.
- Make ahead: The salad can be assembled several hours ahead and refrigerated. For the best texture, bring it close to room temperature before serving.
- Storage: Keep leftovers in an airtight container in the refrigerator for up to 3 days.
- Serving idea: This salad pairs especially well with grilled fish, roasted chicken, lamb, or crusty bread.
- Nutrition: Nutritional values will vary depending on the amount of feta, olive oil, honey, and optional toppings used.
