- 1 tablespoon olive oil
- 6 (4 to 6 ounces each) boneless skinless chicken thighs, or breasts cut into 1″ to 2″ pieces (680-907 g)
- 4 bell peppers, sliced (vary the colors to make it pretty!) (580 g)
- 1 small onion, sliced (110 g)
- 1 recipe Taco Seasoning Mix or our Fajita Seasoning
- 1 cup sour cream (240 g)
- 4 ounces of cream cheese, softened (113 g)
- 2 cups cheddar cheese, grated (226 g)
- Optional: garnish with avocado or guacamole, sour cream, salsa. For spicy lovers add heat with hot sauce.
Directions:
- Preheat the oven to 350 degrees F (175 degrees C).
- In a large skillet over medium heat, saute the chicken in olive oil until the chicken is cooked through. Remove from the skillet and set aside.
- Add the onions and peppers to the same skillet and saute until they become tender.
- Add the cooked chicken back to the skillet and stir in the taco seasoning, sour cream, and softened cream cheese. Mix well.
- Transfer the mixture to a casserole dish and sprinkle with grated cheddar cheese.
