Hearty Meatballs In Gravy

The recipe for these hearty meatballs in gravy is easy, can be made ahead of time and is great for any special occasion or holiday.

Ingredients:

For meatballs:

3 Tablespoons Olive Oil
1 1/2 lbs. Ground Beef, 85% lean
Finely chopped 1/2 Yellow Onion
1/4 cup Breadcrumbs Plain or Italian
2 cloves Garlic, minced
1 large egg
1 Tablespoon Ketchup
1 teaspoon Yellow Mustard
1 teaspoon Worcestershire Sauce
1 teaspoon salt
1/4 teaspoon pepper
2 teaspoons fresh parsley, roughly chopped

For the Gravy:

1 medium Yellow Onion, cut into 1/2-inch strings
1 Tablespoon Unsalted butter
1 cup Chicken Broth
1 cup Beef Broth
1 Beef Bouillon Cube or 1 tsp Better Than Bouillon
1 teaspoon Onion Powder
Garlic Powder 1/2 teaspoon
1 1/2 teaspoons Worcestershire Sauce
Optional: 2-3 drops of Kitchen Bouquet browning or seasoning sauce
1/4 cup of cold water + 3 tablespoons Corn Starch

Instructions:

Brown the Meatballs
Place olive oil aside. Combine all remaining ingredients for the meatballs in a large bowl. Don’t overmix, or it will become tough. Make 1 1/2 inch meatballs.

Over medium heat, heat olive oil in large nonstick skillet. For approximately 2 minutes, brown 5-6 meatballs each. You should leave extra space around each meatball so you can roll them over and cook the other side. Set aside the meatballs on a plate. Continue with all meatballs.

Turn heat down to medium. Heat the butter in a small saucepan. Add any oil/drippings from your meatball plate to the pan. Allow the onions to soften, and caramelize for about 15 minutes. Mix well.

Make sure to prepare the gravy
In a skillet, add the beef broth, chicken broth, beef bouillon and onion powder. Mix well.

To incorporate any brown bits from the bottom of your pan into the sauce, use a silicone spatula. Add 2-3 drops of Kitchen Bouquet seasoning sauce to achieve a darker hue.

Mix the corn starch and cold water in a small Tupperware container with a lid. Mix well.

Bring the gravy to boil. Slowly add cornstarch mixture. Continue whisking until you get the desired thickness. Reduce to medium low. Continue whisking to blend it in.

Add the Meatballs
Heat the meatballs in a skillet for 10 minutes. Serve with mashed potatoes and garnish with parsley.
