With layers of thinly sliced potatoes, savory seasoned beef, and melted cheese, it’s the ultimate comfort meal that’s both budget-friendly and family-approved. Perfect for weeknights when you want something quick, satisfying, and absolutely delicious!

The first time I made this casserole, I wasn’t expecting it to become such a hit—but oh, was I wrong! My husband went back for seconds (and thirds), and even the kids cleaned their plates without a single complaint. Now, this hobo casserole has become one of our “lazy night favorites” because it’s easy to throw together with pantry staples, yet it tastes like something special. Whenever I make it, the whole house fills with that warm, cheesy, baked-potato aroma that makes everyone rush to the table before it’s even out of the oven.

Why This Hobo Casserole with Ground Beef & Potatoes

Here’s why this recipe deserves a spot in your dinner rotation:

  • Easy & Budget-Friendly: Uses simple, inexpensive ingredients like potatoes, ground beef, and cheese.

  • Family Favorite: Comfort food at its finest—everyone will want seconds.

  • Make-Ahead Friendly: Assemble ahead of time and just bake when ready.

  • Cheesy Goodness: Two layers of cheddar plus Parmesan on top make it extra irresistible.

Ingredients:

(Serves 4–6 people)

  • 450 g (1 lb) ground beef

  • 4–5 medium potatoes, thinly sliced (about 700 g / 1.5 lb)

  • 15 ml (1 tbsp) olive oil

  • 1 medium onion, chopped (about 150 g / 5 oz)

  • 2 garlic cloves, minced

  • 120 ml (½ cup) beef broth

  • 60 ml (¼ cup) milk (optional, for extra creaminess)

For Seasoning & Cheese:

  • 1 tsp Italian seasoning

  • ½ tsp paprika

  • Salt & freshly ground black pepper, to taste

  • 170 g (1 ½ cups) shredded cheddar cheese

  • 50 g (½ cup) grated Parmesan cheese

  • Fresh parsley, chopped, for garnish

Directions:

  1. Preheat the Oven: Set oven to 190°C (375°F). Grease a medium baking dish.

  2. Slice the Potatoes: Thinly slice the potatoes into ¼-inch rounds and set aside.

  3. Cook the Beef: Heat olive oil in a skillet over medium heat. Sauté onion and garlic until fragrant. Add ground beef, Italian seasoning, paprika, salt, and pepper. Cook until the beef is browned and crumbly.

  4. Assemble the Casserole: In the baking dish, layer half the sliced potatoes, followed by half the beef mixture, and half of the cheddar cheese. Repeat the layers. Pour beef broth (and milk if using) over the top.

  5. Bake: Cover with foil and bake for 35–40 minutes. Remove foil, sprinkle Parmesan cheese on top, and bake uncovered for an additional 10 minutes until golden and bubbly.

  6. Serve: Let the casserole rest for 5 minutes before serving. Garnish with fresh parsley and enjoy warm!

Notes:

  • Potatoes: Russet or Yukon Gold work best for this recipe.

  • Cheese Variations: Try mozzarella or pepper jack for a different flavor twist.

  • Make Ahead: Assemble the casserole up to 24 hours in advance, cover, and refrigerate until ready to bake.

  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for best results.
