How To Make A Hash Brown Egg Casserole

This hearty egg casserole is a great breakfast, brunch, or even dinner dish that’s made with just a handful of ingredients and pops right in the oven. All you need to do is layer hash browns, cheese, eggs and ham.

Total Time: 50 mins

Servings: 8

What You Need:

8 frozen, precooked hash brown patties (thawing not required).
1 cup shredded sharp cheddar cheese
1 cup shredded Monterey Jack Cheese
1 1/2 cups chopped leftover ham (approximately 3/4 pound).
2 scallions, diced
9 large eggs
1 cup whole milk
1/2 teaspoon salt
1/2 teaspoon mustard dry ground
1/4 teaspoon garlic powder

Instructions:

Pre-heat oven to 350°F. Grease a 9×13 baking pan.

Place the frozen hash brown patties on a single layer in the dish. Sprinkle the cheeses, ham and scallions evenly all over the top.

Mix together the eggs, milk and mustard in a large bowl. Pour the egg mixture evenly over the ham mixture.

Bake for 25 minutes covered with foil. Bake for 20 more minutes, or until edges are golden brown and a knife inserted into the middle comes out clean.

Let cool, then slice into portions and serve.
